does anyone have any vegi recipes that don't have anything acidic in it? write now i'm avoiding tomatoes and the like.

how about carrot ginger squash soup? I don't have an exact recipe, but you basically take veggie stock and boil it up with squash, carrots, potatoes, grated ginger and onions... then you puree it with a food processor or a blender... if you want it a bit creamier you can add either cream or unflavoured soy milk...

you may also want to try veggie collard greens. you can add pretty much whatever veggies u want.
i usually make mine with onions, garlic, red bell peppers. i add curry and seasoning salt (you can add whatever salt u like), and black pepper. i stew all veggies and seasonings while i cut an clean the greens. then i add the greens with the temp on med/high untill they steam down. then lower the temp to simmer for about 30 minutes. they greens are not mushy but not too crisp either. tastes great!
for added punch put a couple bay leaves in while it simmers. remove them when the greens are done. YUMMY!!! my meat eating family love these greens. u can serve it with rice or your own cornbread.
