I'm making my low-carb version of mashed potatoes and oven grilled spring veggies.
1 Califlower boiled
2/3 piece boiled pumpkin (calabaza)
1/2 package tofutti Better Than Cream Cheese (soy-based: casein-free)
2 minced Garlics cloves
salt and pepper to taste

You can omit the pumpkin but it adds color and sweetness.
My mother-in-law made an Indian version by frying onions and jeera (cumin seeds) and hot chilis.
She uses either pumpkin, boiled potatoes or eggplant.
